Lower Paleocene basement. Gravelly clay-limestone soils. Plots of terraced vines. Altitude between 200 and 225 m. North-West exposure. Terroir of Lagrasse.
VINE WORK
145 hours of pruning (the vines are pruned in Goblet and Cordon de Royat). 60 tractor hours. 25 hours of back machine. 45 hours of pickaxe and manual weeding. 40 hours of disbudding. 15 hours of manual topping. 24 hours of harvest. 4800 hours of North wind, the Cers. 2400 hours of sea wind. 500mm of rain. 2 sleepless nights. 295 glasses of Corbières.
The vines are cultivated without the use of insecticides, synthetic pesticides or weedkillers, in organic farming certified by Ecocert since 2003.
AGE OF THE VINES
Carignan from 40 to 84 years old, Syrah from 32 years old, Grenache from 35 years old, Mourvèdre from 19 years old.
VINIFICATION
Manual harvest, the bunches are destemmed and crushed. 20 days vatting. 2 manual pigeages each day, until the cap of marc is completely immersed. Blending of grape varieties in vatting. In addition, we use a vacuum press which makes it possible to obtain very soft presses. So the "Lolo de l'Anhel" contains all of these press wines, supplemented by a vat of Carignan.
